It was delicious with vanilla ice cream.
Here’s the recipe (adapted from Passion for Baking)
2 cups peeled, cored and diced apple
1 cup walnuts
1/2 cup sugar
1/4 cup apple juice
2 tablespoons cornstarch
Cake: 1/2 cup softened butter
1 cup sugar
2 large eggs
2 teaspoons vanilla
1/2 cup milk
2 1/4 cup flour
2 1/4 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
Combine apples, walnuts and sugar. In a separate bowl combine juice and cornstarch until the cornstarch is dissolved. Add to apple mixture and put combined topping in the bottom of a 9 inch springform pan.
Combine butter, sugar, eggs and vanilla. Add in milk. Add sald, soda, powder and flour and mix until combined. Distribute over apple topping in springform pan.
Bake at 350 for an hour. Cool for 15 minutes and remove from pan, inverting onto a serving plate. Eat with ice cream! Yum!
